Our producer is located few kilometers away from “Altopiano della Giara”, he is rooted in a strong family tradition. For over 50 years Paolo and his brothers have been making salami and sausages with ancient local recipes, which they have jealously guarded. The company, which is still a small family business even today, sells its artisan products in the local butcher in his old town.
Mustela or Musteba is a remote food from the Arabic name, still prepared by loin of pork, cylindrical, elongated, with a diameter varying between 10-15 cm and a length of around 60-80 cm.
It's traditional lean, tender, tasty and delicious salami, slightly peppery from Campidano, with a colour ranging from pink to bright red when cut delicate nose, good flavour and sweet taste. it's externally coated with black pepper.
The pork loin is flavoured and washed in white wine and left in salting for several days, it matured naturally for 2/3 months. The Mustela is used as a starter, it's excellent accompanied by a good red or rosé wines, a glass of Vernaccia or Malvasia di Bosa.
Each Mustela weighs 1.100-1.300 Kg on average.
