Our producer is located few kilometers away from “Altopiano della Giara”, he is rooted in a strong family tradition. For over 50 years Paolo and his brothers have been making salami and sausages with ancient local recipes, which they have jealously guarded. The company, which is still a small family business even today, sells its artisan products in the local butcher in his old town.
Lardo is a thick slab of pork back fat that has been aged for 50/60 days and seasoned with rosemary, thyme, nutmeg, cinnamon and black pepper. Sliced thin, it can be eaten plain, with some olive or truffle oil over crusty bread or softened over a baked pizza or brushetta. It's delicious for larding the game or draped over warm beans. It can be added to countless dishes in place of oil or butter.
Each lardo weighs 300-600 grams on average.
