Salted and Smoked Ricotta
Our three types of ricotta are low fat cheeses made from sheep milk whey.
1. Ricotta Mustia is salted and lightly smoked with sardinian herbs, it spends five or six hours in the smoking room where a fire of aromatic herbs is burning. It has an amber colour, a soft, firm texture and a slightly piquant taste with a soft, pressed, brownish-white body. It's an excellent table ricotta as a main ingredient in cooking, grated on pasta and soups. Ricotta Mustia is produced all over Sardinia, in particular in the area of Sassari .
2. Ricotta Salata is a salted matured ricotta aged for at least a month with a pearl white colour, it has a soft, white buttery consistency and delicate milky flavour that can be used with salad, as a pasta condiment or on its own with a slice of carasau bread.
We also stock ricotta gentile, a soft curd cheese made from sheep’s milk whey; gentile refers to the delicate manner in which the fresh curds are hand-ladled into draining baskets. it'smade with organic sheep milk and aged for 3 weeks, it's light and creamy with a slightly grainy texture and delicate flavour.
