Juncu

Juncu is Semi-cooked cheese, produced from thermilized sheep and goat’s milk of Monte Linas area.
The area of Monte Linas is one of the most important place in Sardinia where goat rearing are fed by allowing goats to graze with typical Mediterranean shrubs that give to the milk its particular aroma and flavour.
The cheese is made by being pressed into a “canestri”, (Italian word for wicker basket) and the pattern, will show on the cheese itself. The texture is uniform with white colour and the rind is treated with olive oil which gives it its dark brown colour . The aroma recalls the scents of the Mediterranean, stronger that Crabu with a piquant ending. It's aged longer than 90 days.
