Capretta is a thermized soft cheese with creamy texture and a delicate sweet flavour, made from goat’s milk of which retains the characteristics, like the high digestibility, without neglecting the sensory and nutritional needs. Capretta is aged for 20/30 days and it presents the right balance and the right mix between the content of amino acids, organic acids, lactose and minerals.
